Did we just develop the best plant-based Alfredo sauce ever?

There is no shortage of vegan-friendly marinara or pesto sauces, but successfully creating rich and creamy alfredo sauce is not so simple.

And because of that, most available recipes leave something to be desired.

But... we think we cracked the code.

This decadent plant-based alfredo sauce not only checks all the boxes — smooth, rich, bursting with flavor — but it's packed with protein.

The best part?

It's incredibly simple. Just sautee a few ingredients, blend a few others, and combine.

Ingredients:

 

  • 1 can white beans, strained and rinsed
  • 1 cup mushrooms, chopped
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cauliflower, chopped
  • Juice of half of a lemon
  • 3 tbsp miso paste
  • 3/4 cup almond milk
  • 1 cup nooch
  • 1/4 cup Complement Protein (unflavored)
  • 1/8 tsp salt
  • Pasta of choice

 

Directions:

 

  1. Sauté onion, mushroom, garlic, cauliflower
  2. Blend the sautéed veggies with lemon, miso, milk, nooch, salt, and beans
  3. Boil pasta and strain
  4. Mix sauce with pasta & sprinkle with basil or arugula
