And it's packed with protein...
And it's completely versatile...
And it's absolutely delicious.
Use it as a base for a breakfast bowl, as a healthy dessert, or as a snack for the kids.
When it's made with real foods and prepped in under three minutes, you can't go wrong.
Ingredients:
- 2 blocks of soft tofu (300g each)
- 2 tbsp cashew butter
- 1 cup frozen blueberries
- 3-4 tbsp lemon juice
- 3 tbsp Chocolate Protein powder
- 1/2 tsp salt
- 1 tsp vanilla extract
Directions:
- Blend everything until smooth!
- Store in a mason jar for up to a week in the fridge.
Notes:
- For a stiffer, more ‘Greek’ style yogurt, use 1 block soft & 1 block medium tofu instead.
- Use a high speed blender for optimal smoothness
- Could replace cashew butter with peanut or almond butter
- For extra sweetness, add a few drops of liquid stevia or 1-2 tbsp of maple syrup
